Grape variety: Schiava piccola, Schiava grossa, Lagrein

Type of soil: porphyry on the outskirts and gravel of glacial origin

System of cultivation: pergola with a fruit head for strain

Plant density: 6000 – 8500 vines / hectare

Age of the vines: 20 years

Interventions of quality improvement: thinning of 50% of the grapes in July; half-life partial of the clusters

Harvest: from the beginning to the middle of October

Vinification: crushing and stemming and fermentation in stainless steel tanks at temperature controlled fermentation, with a period of contact on the skins for a week

Aging: malolactic fermentation and short ageing in oak casks of small and medium-sized

Tasting notes:

  • color: intense ruby Red
  • aroma: aroma of almonds and ripe fruit with notes of violets
  • taste: full, warm, noble tannins, soft

Serving temperature: 14° - 16° C.

Pairing: we recommend pairing with appetizers and typical tyrolean dishes such as bacon and cold cuts, but also with white meats and mild cheeses.
