Food pairings: As an aperitif, to match appetizers and elegant as a soufflé of parmesan cheese, the Quiche Lorraine. The encounter with the first dishes of pasta is considered to be exceptional, especially if prepared with sauces based on shellfish. It is also excellent with main dishes of fish, such as sole Bercy or the sea bass in a crust with a mousse of lobster.
Notes: The wine coming from the grape variety, Müller-Thurgau, selected by the researcher from the swiss dr. Hermann Müller in 1882, is a variety of white fruit due to a crossing between Riesling Green and Madeleine Royale. The prerogatives of this variety are of good adaptability to the cold climate of the mountainous regions, and the early ripening, good quality characteristics. For these reasons, the cultivation is widespread in trentino where it has found an ideal habitat in the hilly terrain with an altitude between 500-700 metres s.l.m.. Here, then, is why the Müller Thurgau is cultivated in the small and steep vineyards of the Cembra valley, on the hills around Trento, and in the picturesque Valley of the Lakes.
