Vinification: soft Crushing The grapes are destemmed and after a soft pressing, are placed in the press.
Containers: The clarified must is placed in stainless steel tanks of 50 hl with temperature control.
Temperature: Is maintained at around 16°C to preserve the aromas.
Duration of fermentation: about 30 days.
Ageing: A part of the wine ages in new barriques of French oak for about six months, the remaining stop for the same period in steel tanks with prolonged contact with the yeasts.
Capacity of aging: 5-7 years, pleasant in the early stages, acquires great complexity with the evolution
Food pairings: Suitable to accompany fish soups, or fish on the grill. Very nice also with crostini, or as an aperitif.
Serving temperature: Serve at 8-10°C.
