Denomination: Typical Geographic Indication of Tuscany - a White late harvest.
Grape variety: 100% Traminer aromatico.
Area of production: vineyards located at about 400 mt s.l.m. on rich soils of skeleton mostly composed of galestro.
Year of planting: 1991.
Form of cultivation: spurred cordon.
Production: about 40 quintals per hectare.
Mode of collection: manual in boxes, in mid-October when the grapes are not yet withered, but just lightly dehydrated.
Vinification: soft pressing of the grapes; defecation static at low temperature for 12-18 hours; start-up of the fermentation at 18° and its subsequent interruption, in order to enhance the sweet taste and aroma typical of this wine.
Maturation: in stainless steel tanks for a few weeks.
Ageing: 3 months in bottle.
Food pairing: blue cheeses, foie gras, dark chocolate and all the pastry. Serve at 10-12°.
Alcohol content: 12% Vol.
From grapes aromatic Traminer harvested late to allow for the development of noble rot, was born the Gold of the Cedar. A sweet wine with character, fresh and fragrant with distinct sensations of copper, hints of fruit in syrup and saffron.
