Chianti Rufina Cedro Docg Bio

Altitude: about 400 mt s.l.m.

Characteristic of the Soil: rich of skeleton for the most part made up of marl (rock tuscany in which Chianti owes its character)

Plantation: between 1972 and 1981 (old vineyards); the nineties (modern equipment)

Cultivation System: Guyot and spurred cordon

Production: about 1,5 kg of grapes per vine

Harvest: by hand in boxes, by mid-October

Vinification: destemming and soft pressing of the grapes; fermentation and maceration at a controlled temperature, partly in steel and partly in oak casks of French oak for about 15 days with numerous pumpovers and delestages

Maturation: in French oak barrels of 35 Hl for about 12/16 months

Refinement: in bottle for at least 6 months

Tasting notes:

  • color: intense ruby red and bright
  • nose: wide, sharp and persistent, with hints of small ripe berries and spices
  • taste: dry, full-bodied, the tannins are compact, warm and full; final of good persistence with an aftertaste of fruity notes and spices

This Chianti Rufina wine produced from Sangiovese grapes accurately selected, reflects the typical qualities of the territory and for this it takes the name of the symbol of the Farm. Its uniqueness, combined with the advanced technologie, creates a wine very structured, with a strong attitude for ageing
