Type of Soil: medium mixture, with the skeleton well altered, rich in minerals and trace elements with a PH tending to neutral

Vinification: destemming following crushing of the grapes, with a light berry breaking

Containers: stainless steel tanks of 50 hl at controlled temperature

Temperature: Average 25-26°C. When grapes arrive at the cellar are cooled until 4 degrees prior to fermentation; duration fermentatiion + maceration: 16-20 days depending on the variety

Fermentation-lactic: at 20°C without use of activators

Ageing: in French oak barriques of first passage for 12 months
