Vinification: upon arrival at the winery, grapes are destemmed and after a soft pressing, the must is cooled up at about 4°C and placed in the press, where takes place the maceration in absence of oxygen to preserve the peculiar characteristics of the vine

Containers: stainless steel tanks of 50 hl at controlled temperature

Temperature: 5-6°C in maceration; 14-16°C during fermentation

Fermentation: takes place after the maceration (4 hours) and the first drawn off, at controlled temperature, for about 30 days. After fermentation, the wine is decanted and filtered in order to avoid the phenomena of reduction. It is not carried out malolactic fermentation

Ageing: in stainless steel tanks of 50 hl
