Type of soil: Of medium consistency, good clay component with the abundant presence of the skeleton.

Production: about 1,5 Kg of grapes per plant
Vinification: upon arrival At the winery, the grapes are destemmed and after a soft pressing, is cooled up to about 4oC and placed in the press, where takes place the maceration in the absence of oxygen to preserve the peculiar characteristics of the vine.
Containers: stainless steel Tanks of 50 hl with temperature control
Temperature: on Average, 5-6°C in maceration; 14-16°C during the fermentation.
Fermentation: takes place after the maceration (4 hours) and the first drawn off, at a controlled temperature, for about 30 days. After fermentation, the wine is decanted and filtered in order to avoid the phenomena of reduction. It is not carried out malolactic fermentation.
Ageing: In stainless steel tanks of 50 hl.
Alcohol Content: 13,5% Vol.
Volatile acidity: 0,48 g/l
Total acidity: 5,80 g/l
Food pairings: Excellent as an aperitif and with fish dishes, also well seasoned.
Service temperature: 7° - 8° C.
