Grapes: 60% Primitivo – 40% Susumaniello
The characteristics of the Soil: Primitive: medium textured, clayey;
Wine: red is shallow, on layers of calcareous rock.
Vinification: Primitivo: fermentation with maceration for about 10 days at controlled temperature ageing 12 months in oak barrels and 3 months in the bottle. Wine: aged in stainless steel.
Alcohol Content: 15,5% Vol.
Service temperature: 16° - 18° C.
Serving suggestions: fresh Pasta (orecchiette, lasagna, macaroni) with meat sauce, aged cheeses (caciocavallo podolico, pecorino of Maglie) and blue-veined cheeses; grilled meats, wild boar, pork.
