Vinification: Fermentation in stainless steel tanks, at controlled temperature of 26° and 28° degrees for the duration of 8/12 days, frequent pumping over and malolactic fermentation.
Maturation: ages slowly for 14/16 months in tonnaux oak barrels, 70% first passage 30% second passage.
Average life of wine: age-worthy Wine, mature with the aging in the bottle, improving the organoleptic characteristics for several decades.
Gastronomic combinations: Excellent to accompany, great first, risotto or agnolotti, and the full range of meat, from veal cutlets or roast lamb, roast kid, its great elegance and complexity elevates it to a great meditation wine.
