Characteristics of the Soil: marl, whitish, loose, composed of clay, sand and silt
Harvest Period: generally the second decade of September according to the level of maturation
Vinification: the must obtained from the soft pressing of the grapes is left to settle in tank for a few hours, at the end of which it is provided to the transfer, and a lowering of the temperature to 2-3° C for easy storage. The next stage is represented by the fermentation of the must in autoclave at controlled temperature (16-18°C) until the alcohol request of 5.5 % Vol. In this phase, the form of the “perlage” typical of the Moscato grape, which is obtained by creating on the inside of the tanks with an excess pressure with the CO2, produced naturally from the fermentation process, until the age of 2 ATM, not beyond that. Filtrations allow to obtain a clear and stable wine that will be, then bottled at very low temperatures to facilitate storage
Ageing: the wine is filtered and stored in autoclaves at a controlled temperature between 0 and 2°C
