Area of production: vineyards of property of the company located in the municipality Ghemme

Vinification: after crushing and destemming of the grapes, the fermentation, primed with selected yeasts Saccharomyces cerevisiae, is carried out in turbine pump, vertical, where the punching down and pumping over are carried out without the aid of pumps, but the effect of the overpressure produced by the fermentation. The skin maceration lasts the circus 10 days at a controlled temperature

Aging: Immediately after the racking the wine is matured in French oak barrels of 25 and 50 hl, where is conducted the malolactic fermentation and rackings during the whole period in order to facilitate the clarification and stabilization of the polyphenols. The total period of maturation lasts for between years, of which at least 10 months in the bottle.

Alcohol content: 13,5 % vol

Tasting notes:

  • colour: Ruby red of good intensity, with light shades of garnet, bright, sloping down to the nail
  • bouquet: Very intense, with pleasant notes of sour and tobacco green, light tones of balsamic and purple Net vein mineral.
  • taste: in the mouth it is sweet and dense, with a good freshness that accompanies to a closure a long, slightly mineral and very persistent.
