The skin maceration lasts the circus 10 days at a controlled temperature
Aging: Immediately after the racking the wine is matured in French oak barrels of 25 and 50 hl, where is conducted the malolactic fermentation and rackings during the whole period in order to facilitate the clarification and stabilization of the polyphenols. The total period of maturation lasts for between years, of which at least 10 months in the bottle.
