Grape Variety: 100% Dolcetto
Vineyard: The vineyards of the “Bric”, 500 are exposed to the south west. Raised with the Guyot system with a headband cheap, organic fertilizing and plant protection treatments based on natural products such as sulfur and copper, allow a yield average of about Kg 7,000 per hectare. The grapes come from organic cultivation certified.
Maturation and ageing: vinification is traditional with maceration on the hat for 6 - 8 days. Since it is a wine without added sulfites are very careful to store trying to arieggiarlo in the least, and is aged in cement vats at low temperatures for best shelf life, bottling takes place in late spring, usually in the month of may, after it is refined in bottle for 30 days before being launched to the market.
The wine: Born from a favourable southern exposure, the Dogliani dolcetto “Bric” offers a ruby red color, intense and deep, with fine purple shimmer. The nose reveals scents vinous, ethereal and fruity of cherry and jam. The flavour is dry, warm, tannin soft and a slightly bitter aftertaste.
Food pairing: its harmonic structure it goes nicely with pasta with meat sauce, roasted and grilled white and red meats, fresh cheeses. It is advisable, as is a wine without added sulfites, uncorked half an hour before serving, even better if scaraffato.
Alcohol content: 13%vol.
Storage and service: For its characteristics of a wine without added sulphites will not have a long life, so you should consume it within the first 3 years of life, it serves preferably to a temperature in the range between 15 and 18 °C.
