Grape variety: this wine reserve the best exposures to the south, the south - east. We are very attentive to the trends of the season and, therefore, we proceed with careful pruning in the month of August and rigorous selection during the harvest, the yield never exceeds Kg.6000 per Ha.
Maturation and ageing: classical Vinification with destemming and maceration on the cap for 8 - 10 days check with meticulous care. Then it Matures in oak barrels of 30 HL. for about 15 months until bottling, which takes place only after repeated tasting. It is refined in bottle for a couple of months before being launched to the market.
The wine: Surprising for the complexity of the structure, presents itself with an intense ruby color and deep, vibrant purple hues and an impact on the nose large, ethereal and persistent of ripe fruit and jam of cranberries. The hint of elegant wood, complete with a full flavor, warm and sapid, slightly tannic, pleasantly bitter finish.
Gastronomic combinations: it is sufficiently structured and harmonious on the palate to accompany a cuisine prepared and most important: stuffed pasta, stewed or braised, seasoned cheese.
Alcohol content: 14%vol.
Storage and service: Improves for the first 4 - 5 years after vintage but can be over 10 years, and it is advisable to serve it at a temperature that varies between 16 and 18 °C.
