Grape Variety: 100% Dolcetto
Vineyard: The vineyards of the Suri, are cultivated with the guyot ad archetto low treated with biological systems at low environmental impact, exposed to the south, south – east, give an average yield of Kg.7000 per HA.
Maturation and ageing: traditional Vinification with destemming of the grapes, careful pumping over. The maceration lasts from 6 to 8 days depending on the year. After fermentation it matures in vitrified cement tanks until bottling, as a wine of excellent structure, we prefer to leave it more time to mature in the tub, the bottling usually takes place at the end of August. It is refined in bottle for a month before being placed on the market.
The wine: The Dogliani docg “Suri” derives from the excellent exposure to the sun is a very intense red ruby colour with violet reflections and an aroma elegant and complex with red fruits, jam and liquorice. The palate offers a feeling for harmonic and persistent, warm, soft, slightly tannic.
Food pairings:a Wine with an intense and balanced, it combines with elegance to the pastas, to roasted red meats and stew, medium aged cheeses.
Alcohol content: 14%vol.
Storage and service: keeps You full of energy for 7 - 8 years and may be served at a temperature of between 15 and 18 °C, depending on the season.
