Grape Variety: 100% Dolcetto
Vineyard: an Assembly of several vineyards of our estate, cultivated with the guyot ad archetto low, raised with organic methods, in the maximum respect of the environment. The average annual is about Kg.8000 per hectare.
Maturation and ageing: traditional Vinification with destemming of the grapes, careful pumping over. The maceration lasts 5 - 6 days depending on the year. After fermentation it matures in vitrified cement tanks until bottling, being an easy-drinking wine needs less maturation in the tank and is then bottled before all the others Dogliani, usually it is bottled in the month of may. It is refined in bottle for a month before being placed on the market.
The wine: The Dogliani “Pirun” is young wine, fresh and fragrant, ready for the table already in the late spring following the harvest. It has an intense ruby red colour and a fresh and fruity smell that reminds you of the cherry. The flavour is dry, medium-bodied, soft, balanced acidity and a pleasantly bitter finish.
Pairings: it is ideal with casual cuisine and snacks of local meats and fresh cheeses. It goes with ease to the recipes of the daily table.
Alcohol content: 12%vol.
Storage and service: keeps You full of energy for 2 - 3 years, and may be served at a temperature of between 15 and 18 °C, depending on the season.
