Vinification: the grapes, after careful selection, undergo, immediately after the manual harvest, soft pressing. The must obtained is left decanting and then fermented at a controlled temperature of 17 – 18°) in stainless steel tanks. In the spring the base wine, with added sugar and selected yeast (“liqueur de tirage”) is bottled. The bottles are placed lying down horizontally in large piles in an environment at a constant temperature from 12 to 14 degrees, where they will remain for at least 36 months for the second fermentation (2nd fermentation). Subsequently, the bottles are in the phase of “ remuage” ( shaking) with the purpose to detach the sediment feccioso from the walls of the bottle and lead him up to the cap of the bottle upside down. Then follows the phase of “disgorging” ( dégorgement ), the bottles will be rabboccate by adding a small dose of “ liqueur d'expédition” . The sparkling wine at this point is capped and left to rest a few months before the sale.

Serving suggestions: excellent as an aperitif, it accompanies all dishes, except dessert.
