Produzion Area: San Floriano del Collio (Gorizia)

Soil Composition: hilly, layers of clavey marl and sandstone, locally called “ponca”

Altitude: 200 m./above sea level

Average Age of the Vineyards: 14 years

Pruning System: Guyot

Vineyards: no use of herbicides; organic agricolture

Harvest Period: end of September

Vinification: grapes are selected and harvested manually and destemmed; the must is left on the skins for 30 days in conical oak vats without temperature control; when alcoholic fermentation starts with indigenous yeasts, the skins are immersed in the must 3 times a day by manual punching down; soft pressing; the alcoholic fermentation continues; ageing without controlled temperature in French barriques for 24 months, always on the lees 

Ageing: in bottle for at least 12 months

Tasting Notes:

  • colour: garnet-red
  • nose: wide and very complex bouquet with notes of red fruits, raspberry, cherry, cherry jam, plums, blackberries, black currant, licorice, green bell pepper
  • taste: full-bodied, high acidity and tannins, mineral, persistent; notes of fresh herbs and vanilla

Aging Potential: over 30 years

Note: fermented with indigenous yeasts, without temperature controls, not clarified, unfiltered, very low sulphite contents
