Classification: Denomination of Controlled and Guaranteed Origin

Production area: The production area is included in the area of the Colli Orientali del Friuli, north of Udine and, more specifically, between the towns of Nimis and Tarcento. The morphology of these hills is particular, the slopes are very marked – more than 30% – and very often the processing must be done completely by hand. The terraces are narrow, sometimes less than a metre but, given the steep slopes, there is a risk of shading.

Grapes: Verduzzo Friulano, the yellow clone.

System of Breeding: Guyot

The characteristics of the Soil: Marl and sandstone of eocene origin

Period of Harvest: The grapes are harvested late, very often with a slight drying on the vine; in fact, the harvest may even take place at the end of November.

Vinification: The vinification must be carried out within the production area. Years ago, it was used the technique “to” cap riser, i.e. a light maceration that, given the low temperatures normally achieved here in the autumn, resulted in a mild maceration; today, producers dry the grapes in special air-conditioned rooms, resulting in a wine of considerable aromatic complexity.

Aging: in wood for 18 - 24 months.

Tasting notes: The Wine is old gold yellow colour and has the scent of acacia, ripe fruit, plums and apricots; the taste is full bodied, very long in the mouth – since the pleasant sensation remains for a considerable time after swallowing – it is slightly tannic, deliciously sweet and recalls the agreeable and slightly bitter taste of chestnut honey with nuances of lime blossom honey.

Alcohol Content: 14% Vol.

Service temperature: 10° - 12° C.

Combinations: a meditation wine, excellent with foie gras, pâté of liver, prosciutto San Daniele and Sauris smoked trout; it is no less delicious with Gorgonzola, Parmigiano Reggiano, Grana Padano, Pecorino, or aged Montasio, the fruit and the pastry, Gubana.
