Harvest: the ripening of each variety.
Maceration: depending on the individual variety. The malolactic fermentation: this takes place after you have combined the three varieties in French oak barrels.
Elevation: in barriques and barrels for 15-18 months.
Bottling: June/July. Once bottled the wine rests for 12 months before being marketed.

Tasting notes: intense red color with violet reflections. Hints of bright berries, plums and bitter chocolate give way to intense aromas evolved. The continuity with the taste is guaranteed by the softness of a red-bodied, dry and vinous.
Pairings: at the table, the crown brought red meat in casserole, especially venison or grilled, but it is good companion for the whole lunch.
Mesc: 17 - 18 degrees in large goblets after adequate oxygenation.
The capacity for evolution in bottle: 12 years.
Notes: Red must Be Thinking: it combines the traditional methods of production, the personality and character of a wine created with attention to detail. The choice of the grapes, the method of collection, winemaking, supported by the oak barrels and barriques, the time of maturation and ageing in the bottle allow the creation of a class red that brings generosity to the Eastern Hills of Friuli.
