Harvest: the ripening of each variety.
Vinification: in white (the must is immediately separated from the grape stalk from the skins by soft pressing).
Fermentation takes place in barriques of French oak (Allier).
Elevation: in barriques (Chardonnay) and barrels (Sauvignon) for 8 - 10 months.
Bottling: July. Once bottled the wine rests for at least 3 months before being marketed.

Pairings: wine for the entire meal; excellent with important appetizers, soups, tasty pasta and gnocchi with sauces of medium thickness, white and red meats. Elegant with sweet biscuits.

Notes: The White Sonata: it combines the traditional methods of production, the personality and character of a wine created with attention to detail. The choice of the grapes, the method of collection, winemaking, supported by the oak barrels and barriques, the time of maturation and ageing in the bottle allow the creation of a white class which in itself bears the generosity of the Colli Orientali del Friuli.
