Vinification technique: traditional white, with maceration on the skins for 12 days in vats conical oak barrels without temperature control, with punching-down done manually every 6 to 8 hours. The product matures in the barrels ‘tonnoaux’ for 18 months. The wine undergoes no fining nor filtration. Bottled in May and aged in the bottles lying down for 6 months.
Visual appearance: yellow with coppery highlights.
Notes on flavour and bouquet: The wine has a pleasant bouquet, full-bodied and rich in tannins. Recalls the scents of over-ripe grapes, citrus and slight notes of chocolate.
Alcohol content: 13,5% vol.
Food pairings:it Can be a meditation wine. Wine for strong cheeses and smoked meats.
