Production zone: Franciacorta (Brescia), from vineyards situated in Provaglio d'iseo, Gussago, and Monticelli Brusati.

Planting density: 4.000-5.000 plants/hectare cordon-trained.
Vineyard management: Grass controlled total. Fertilizer natural organic. Biological pest control.
The characteristics of the terrain: Hilly, and the soil hilly, mainly clay and marl with natural resources of minerals and trace elements. Exposure south-South-West.
Harvest: A harvest rather early allows to obtain a product of the right alcohol content and acidity, while preserving to the maximum floral and fruity aromas. Harvest manual and box, with selection of the grapes on the vine.
Vinification: soft Pressing of the whole grapes with pneumatic presses. Sedimentation natural cold. The first fermentation takes place in stainless steel tanks with constant temperature control at 18°.
Maturation: bottled (tirage) in spring next year of the harvest; refermentation in the bottle, and fermentation with selected yeasts, and subsequent aging on the same for a minimum of 30 months in the cellars at a constant temperature of between 12° and 15°.
Best time to drink: after 3-4 months from the date of disgorgement.
Tasting notes and serving suggestions: straw yellow Colour, elegant floral notes, fresh fruit, and yeast. Caresses the palate with fine and persistent bubbles that enhance infinite softness and elegant structure. Final pleasant and persistent. The silkiness of this product is well suited to pairing with fish, steam-cooked and delicate first courses of fish or vegetables.
Excellent also as an aperitif.
