Franciacorta Docg "Mon Satèn" Brut Millesimato 2016

Production Area: Franciacorta (Brescia), from vineyards situated in Provaglio d'iseo, Gussago, and Monticelli Brusati

Yield per Hectare: 80/95 hundredweight

Planting Density: 4.000-5.000 plants/hectare cordon-trained.

Vineyard Management: grass controlled total; natural organic fertilizer

Type of Soil: hilly, mainly clay and marl with natural minerals

Exposure: South-South-West

Harvest: a rather early harvest allows to obtain a product of the right alcohol content and acidity and preserving its maximum floral and fruity aromas. Harvest manual in boxes, with selection of the grapes

Vinification: soft pressing of the whole grapes with pneumatic presses; natural cold sedimentation; first fermentation takes place in stainless steel tanks with constant temperature control at 18°C

Maturation: bottled (tirage) in spring next year of the harvest; refermentation in the bottle, and fermentation with selected yeasts and subsequent aging on the same for at least of 30 months in cellars at constant temperature of 12-15°C

Best Time to Drink: after 3-4 months from the date of disgorgement
