Characteristics of soil: Soil soil-hilly, mainly clay and marl with natural resources of minerals and trace elements. Exposure South-South-East.
Harvest: A harvest rather early allows to obtain a product of the right alcohol content and acidity, while preserving to the maximum floral and fruity aromas. Harvest manual and box, with selection of the grapes on the vine.
Vinification: soft Pressing of the whole grapes with pneumatic presses. Sedimentation natural cold. Partial maceration on the skins of the Pinot noir. Fermentation at a controlled temperature of 18°.
Maturation: bottled (tirage) in spring next year of harvest; - fermentation and re-fermentation in the bottle, with selected yeasts, and subsequent aging on the same for a minimum of 30 months in the cellars at a constant temperature of between 12° and 15°.
Best time to drink: after 3-4 months from the date of disgorgement
Tasting notes and food pairings: Villa Franciacorta Rosé is a demi-sec, which combines the pleasant sweetness and creaminess of the taste, the delicacy of color and elegant aromas. Ideal with pastries and desserts without cream, to try the unusual combination with salted pork and medium-aged cheeses.
