Soil Composition: gravelly and medium textured

Cultivation System: spurred cordon

Harvest: end of September – beginning of October

Vinification: after careful organoleptic analysis, grapes are cooled for 48 hours at a temperature of 8°C; then alcoholic fermentation with indigenous yeasts at controlled temperature of 18-20° for 7 days

Sparkling Process: re-fermentation in autoclaves in stainless steel at a controlled temperature

Aging: on yeast fermentation in tanks for at least 4 month

Tasting Notes:

  • nose: fruity aromas of cherry, raspberry and blackberry
  • taste: mellow, sweet but supported by a good acidity that makes it vibrant, fresh and soft
