Vinification: careful evaluation of the period of harvest, careful selection of the grapes both on the vine and in the cellar, spontaneous fermentation with indigenous yeasts, long maceration on the skins at a controlled temperature in vats conical oak barrels with punching down and délestage

Ageing: 12 months in vats and conical oak barrels 50 hl, 12 months in bottle

Alcoholic strength: 13.5% vol.

Temperature of service: 18 °C.

Tasting notes:

  • colour: ruby red of good consistency
  • scent:it has floral notes of violets followed by a nice fruity, fresh red fruit, blackberry and cherry.
  • taste: in the mouth it is full and balanced, long finish that reveals tannins of remarkable finesse

Food pairings: excellent with pasta dishes with meat sauce and red meats, as an accompaniment to braised with porcini mushrooms, leg of lamb, but also grilled salmon, brie cheese, and pecorino cheese.
