Type of harvest and the grape harvest: hand harvesting into small crates at the beginning of September

Type of soil: tufaceous-calcareous

Grapes per vine: 1.5 kg

Vinification: careful evaluation of the harvest period; the careful selection of the grapes both on the vine and in the winery, with particular attention to the exposure to the sun and to the integrity of the grapes brought to a sorting manual. Control of the temperature, the pressing of the whole clusters, short cold static decanting of the must, followed by spontaneous fermentation with indigenous yeasts.

Fermentation: 50% steel and 50% in oak barrels

Ageing: stay on its lees for 8 months with the handling of the lees; at least 12 months in the bottle

Tasting notes:

  • color: straw yellow with golden reflections and good brilliance.
  • aroma: the nose is fine and intense, elegant in awards of fruity notes, floral and spicy.
  • taste: the taste is broad, round and soft, very warm and long persistence, and the final, slightly mineral. Great as a meditation wine.

Alcoholic strength: 14.5% vol.

Serving temperature: 14°C.

Serving suggestions: fish dishes tasty in the oven and baked, shellfish, sea fruits, risotto with fish, frogs and snails, grilled mushrooms, boiled meats, white meats, mature cheeses.
