Production Area: South of the valley of the Rhone, at Avignon

Averag Age of the Vines: 40 years

Type of Soil: the substratum is limestone with a shallow layer of sand or pebbles

Vinification: manual harvesting done at night to avoid oxidation, maintaining the freshness of the grapes, avoiding the massive use of SO2, fermentation is carried out with indigenous yeasts at a high temperature of 28°C (82°F)

Refinement: some months in bottle
