Characteristics of Soil:the substratum is limestone with a shallow layer of sand or pebbles.
Vinification: manual Harvesting done at night to avoid oxidation, maintaining the freshness of the grapes, avoiding the massive use of SO2, fermentation is carried out with indigenous yeasts at a high temperature of 32°C. it follows a long maceration on the skins for 15 days, the extraction of anthocyanins and tannins are made during this period.
Refinement: Some months in the bottle
Tasting notes: biodynamic Wine, the dark ruby red colour, on the nose the remarkable scents of underwood fruits red, spices, licorice, slightly smoked, truffle and scents of the garrigue (wild herbs), in the mouth it is powerful, warm, elegant and persistent.
Alcohol Content: 13% Vol.
Service temperature: 16° - 18° C.
Storage: Up to 8 years.
Combinations: The combination the better is with the game and the meat sauce, but does not disdain also the cold cuts and cheeses.
