Grapes: 59% Roussanne And 41% Viognier

The characteristics of the Soil: pebbles and red clay.

Vinification: Selection of grapes of the old vines with low yields

Manual harvesting in small boxes
Cold maceration with contact on the skins
Fermentation in French oak barrels (500L)
Ageing on the lees with bâtonnage for 9 months
Bottling without filtration

Tasting notes:

  • color: intense Golden with greenish reflections.
  • aroma: Powerful aroma with a multitude surprising fragrances of white flowers, beeswax, sweet spices, star-anise, violet, and vanilla
  • taste: The body is incredibly dense, soft and rich, delivers fully ripe flavours of the fruit. The finale is a delicious aromatic that you'll long remember.

Alcohol Content: 12% Vol.

Temperature Service: 12° C.

Food pairings: white Meats, veal, pork, seafood, lobster, sword fish, soft cheeses-goat.

Notes: Decidedly Mediterranean for its spices and ripening of the fruit, a truffle, which is at the same time powerful and subtle, and looks like nothing else!

In search of wealth, the complexity and the tension of the mineral, the blend of this cuvée in particular can change from year to year. Two areas are particularly exceptional: Bech (in the south), with a Viognier bright and Brousson (in the north) with its Roussanne incredibly mineral.
