Type of Soil: clavey-chalky with large rounded sun-warmed stones which diffuse a gentle providential heat that helps the grapes to mature
Harvest: by hand with selection of the best grapes
Vinification: grapes are slightly crushed and placed in a fermentation concrete tank; long vatting at controlled temperature for 21 days with pumping-over and punching of the cap to obtain a reasoned extraction of tannins
Aging: 2/3 in oak barrels for 12 months and 1/3 in barriques
Refinement: some months in bottle
Ageing Potential: more then 15 years; wine produced only in great vintages
