Soil characteristics: The soil is clay and limestone with pebbles or stones heated by the sun, which providentially spread gentle heat, promoting the maturation.
Harvest: Manual with selection of the bunches in small crates.
Vinification: crushing and stemming with soft pressing, alcoholic fermentation in concrete tanks. Malolactic fermentation for 21 days at a controlled temperature, with pumping-over and punching-down, allowing the extraction of the rational tannins.
Aging: aging takes place in oak barrels for 12 months, 2/3 and 1/3 in barriques.
Refinement: some months in the bottle
The maximum Expression of the Drink: After 4/5 years. Wine with potential to be great for ageing, produced only in great vintages.
Tasting notes: deep purple Colour, this wine has a nose of rich aromas of incense, cocoa, powerful notes of red fruit (raspberry) with hints of spring flowers (violets, mimosa). In the mouth, the wine is structured, concentrated, full-bodied. The tannins are present but well blended. A persistent finish with spicy notes.
