Soil characteristics: The soil is clay and limestone with pebbles or stones heated by the sun, which providentially spread gentle heat, promoting the maturation.
Period of Harvest: Manual with selection of the bunches in small crates.
Vinification: crushing and stemming with soft pressing, alcoholic fermentation in concrete tanks. Malolactic fermentation for 21 days at a controlled temperature, with pumping-over and punching-down, allowing the extraction of the rational tannins.
Aging: aging takes place in oak barrels of 50 Hl.for 10 months for 90% and 10% in barriques.
Refinement: For a few months in the bottle
The maximum Expression of the Drink: After the 4/5 year
Tasting notes: Color bright purple, the nose prevailing aromas of red fruits, licorice and herbaceous, herbs of the Provence. The palate is round and soft, with concentrated aromas of cherry, strawberry and grape spirit. Very well balanced in the finish and persistent.
Alcohol Content: 14,5% Vol.
Service temperature: 16° - 18° C.
