Production Area: Boursault, Valley of the Marne few kilometers from Epernay

Age of the Vines: 50% more than 45 years

Type of Soil: calcareous - clayey

Harvest: manual harvesting in small boxes

Vinification: soft pressing, clarification by gravity for 24 hours in stainless steel tanks at controlled temperature before alcoholic fermentation in stainless steel; blending of the cuvée and then second fermentation on the lees for a period of 4/5 years before disgorgement with the addition of “liquer de la maison”

Tasting Notes:

  • colour: bright gold, very fine perlage
  • nose: smoky, intense
  • taste: frank, powerful, subtle notes of honey, toasted bread and underbrush,  good body and persistence, saline finish
