Vinification: soft Pressing, clarification by gravity for 24 hours in stainless steel tanks at a controlled temperature before alcoholic fermentation in stainless steel, the assembling of the cuvée ( 70% harvest 2012 – 30% vin reserve Soléra) and then the second fermentation on the lees for a period of 3 years. Following disgorgement, with the addition of “liquer de la maison”
Tasting notes: bright straw-yellow Color, the nose is aromatic, fruity, aromas of cherry and baked apple. In the mouth it is elegant, intense, with notes of cherry, baked apple, subtle notes of almond, structured body, good intensity and good persistence.
Alcohol Content: 12% Vol.
Service temperature: 5° - 6° C.
Pairing: Ideal as an aperitif, fish dishes and throughout the meal
