Exposure and altimetry: exposure prevailing at noon on the terraces located between 300 and 500 m/ s.l.m.

Type of soil:the franks, generally constituted by the rearrangement of the fragments of the type detrital and pyroclastic.

System of breeding: espalier is grown with the guyot and a radially atypical (traditional system).

Planting density: in the new planting sites you can reach from 4000 to 5000 vines per hectare. In the vineyards the traditional, you arrive at the density of 2500 vines per hectare.

Yield per hectare: the production is about 90 q.

Time of harvest: Second decade of October.

Vinification: the grapes, harvested by hand, arrive at the cellar after careful selection in the vineyard, after destemmed remain to macerate for some hours with the skins, after that is done the beating. The must of tank is subjected to cold static decanting, the must flower that comes from it is inoculated with selected yeasts and fermented at low temperature to preserve the aromas. The fermentation lasts about 20 - 30 days.

Refinement: elevagés sur lies for 4 - 5 months.

Total acidity: 5.3 per thousand expressed in tartaric acid

Alcohol content: 12.50 % vol.
