Vinification: the grapes, harvested by hand, arrive at the cellar after careful selection in the vineyard, after destemmed remain to macerate for some hours with the skins, after that is done the beating. The must of tank is subjected to cold static decanting, the must flower that comes from it is inoculated with selected yeasts and fermented at low temperature to preserve the aromas. The fermentation lasts about 20 - 30 days.
Refinement: elevagés sur lies for 4 - 5 months.
