Classification: Appellation Chablis Premier Cru Contrôlée

Production Area: Poinchy, Yonne

Type of Soil: Jurassic limestone; the rocks contains deposit of tiny fossilised oyster shell which remind that Bourgogne once lay beneath a warm ocean

Harvest: handpicking

Vinification: soft pressing, fermentation in stainless steel tanks; 20% of the wine is aged in barriques; vinification lasts 6 to 12 months

Ageing: some month in bottle

Tasting Notes:

  • colour: pale gold or greeny gold; age depens the colour
  • nose: very fresh, lively and mineral with flint, green apple, lemon, underbrush and field mushrooms; notes of lime-flower, mint and acacia occur frequently, as do aromas of liquoriceand freshly-cut hay
  • taste: perky and full of juice, the attack is intense; long and likeable persistence leads to a smoothand serene finish; very dry and impeccably delicate

Keeps: it can be enjoyed young as well as aged (10 years old)
